Our chocolate comes from Colombia

We buy beans directly from the farmers in Tumaco and other regions of Colombia. They get processed in our Chocolate Workshop in Bogotá in 3.5 kg bars, and then straight to Cornwall Bridge.

It starts with the plants

Cocoa is a fruit, but we are interested in the seeds inside. The flesh of the fruit tastes very tropical, but its not normally consumed. The seed pod is cut open and the fruit mashed up to ferment the seeds.

Fermentation sterilizes the beans and adds flavor

The fermentation process is done on the farms, under the guidance of the people who know their plants the best.

Beans are then roasted to further develop flavor.

At this point the beans have gone from the farmer to the village collective, where we buy the beans.

Then we put them in a van and drive to Bogotá

Our chocolate scientists get to work

Here we begin the processing of the beans. First we shell, roast, grind and finally press te raw chocolate into 3.5 kg blocks for shipment.
